1 1/2 cups all-purpose flour 1 1/2 teaspoons baking powder 1/4 teaspoon salt 1 cup SPLENDA granular 1 egg, lightly beaten 1 teaspoon vanilla 1 teaspoon coconut extract 1/2 cup butter or margarine 1/3 cup medium, unsweetened coconut 1 Tablespoon SPLENDA granular
Sift the flour, baking powder and salt into a bowl. Stir in splenda. Stir in the remaining ingredients, except for the coconut. Take heaping teaspoons of dough and form into balls. Mix coconut and splenda together. Press the dough balls into coconut, covering both sides and flatten into a round cookie shape. Place on a greased cookie sheet. Bake at 375 degrees for 7-10 minutes. Makes 25 cookies.
