1/2 cup margarine 1 1/4 cup white sugar 2 eggs 1 1/4 cup sweet potatoes (cooked and mashed) 1 1/2 cup flour 1/4 tsp. each salt and nutmeg 2 tsp. baking powder 1 tsp. cinnamon 1 cup milk 1/4 cup each pecans, raisins
Cream margarine, sugar, eggs, sweet potatoes. Sift together flour,salt, nutmeg, baking powder and cinnamon and add to other mixture. Add milk slowly until well mixed. Fold in chopped pecans and raisins. NOTE: Raisins should be soaked in hot water for 1/2 hour and drained before use.
Preheat oven for 400 degrees and bake 12 minutes. I use "mini" pans.
Makes about 6 dozen. *1 teaspoon batter in each. *For large pans use 2 teaspoons and bake longer.
