Makes 4 individual pies--one for each paw
Filling:
1 lg sweet potato 1/8 c honey 1 egg pinch nutmeg pinch cinnamon
Crust:
1 1/2 c white flour 1/4 c honey 1/4 c veg shortening 3-4 tbsp iced water
Preheat oven to 350 degrees.
Cook sweet potato by baking for approximately 60 mins. When potato has cooled, peel off skin.
Mix sweet potato with honey, egg, nutmeg and cinnamon, and set aside.
To make crust, cut shortening into white flour and honey until crumbly.
Add iced water 1 tbsp at a time until mixture binds together. Knead until smooth. Roll out dough and cut four 5-inch circles to form crusts in 4-inch foil pie pans.
Pour sweet potato mixture into crusts and bake for 25 mins. Cool before serving. Store well wrapped in the refrigerator.
