1 cup non-fat, plain yogurt 1/2 cucumber, peeled and sliced 6 fresh mint, chopped 2 cloves garlic, finely minced 1 teaspoon extra virgin olive oil
Combine all the ingredient in a blender, and pulse for 15 seconds. Refrigerate at least 2 hours before serving.
Makes 2 cups
Use this dressing with rice as well as salads. Also used in Gyros.
