1 Package of Won Ton Wrappers
2 Cups Ricotta Cheese
1 Cup Shredded Mozzarella Cheese
1 Cup Grated Parmesan Cheese
3 Tablespoons Pesto
1 Egg
Dash of Pepper
1 Egg White with 1 Tablespoons Water
2 Cups Marinara Sauce
Grated Parmesan Cheese for Topping
I covered my counter with plastic wrap.
Lay out half of the wrappers.
Mix the ricotta, mozzarella, parmesan cheese, egg, pesto and pepper. Combine well.
I used a small cookie scoop.
Put 1 Tablespoon of the mixture in the middle of the wrapper.
Combine the egg white and water... Brush the edges around the mixture.
Place another wrapper on top and press down around the mixture.
Bring a large pot of water to a rolling boil... add a pinch of salt...
Cook 4-5 ravioli at a time... as soon as they float to the top they are done!!!
Serve with marinara sauce over top of the ravioli.
