•2 lbs ground beef (80/20) •1 large yellow onion, minced •4 large garlic cloves, minced •3 cups water •2 (15 oz) cans diced tomatoes •2 (15.5 oz) cans tomato sauce •3 tbsp. soy sauce •2 tbsp. dried oregano leaves •2 tsp dried basil leaves •2 dried bay leaves •1 tbsp. seasoning salt •1/2 tsp black ground pepper •2 cups elbow macaroni, dry
In a large pot, cook beef over medium heat until no longer pink (do not drain)
2. Stir in onion and garlic and cook until onions become translucent
3. Stir in everything else, except macaroni, and bring to a boil
4. Cover and reduce heat, simmering for 20 minutes stirring occasionally
5. Stir in macaroni, cover, and simmer on low for about 20-25 minutes until noodles are tender
6. Remove bay leaves and allow goulash to sit for at least 15 minutes to thicken
My Thoughts:
This recipe makes a ton and is very budget friendly. This goulash is very mild, so kids will eat it up! You can easily incorporate vegetables or hot sauce/chili powder for some extra heat. The noodles get a tad mushy the next day but otherwise it makes for pretty good leftovers.
