Fiesta Filling: 1/4 cup minced onion 1/4 cup peeled, seeded, and minced fresh tomato 1/4 cup drained and minced canned green chiles
Avocado Topping: 1 large ripe avocado, peeled, pitted, and chopped 1/4 cup sour cream 2 teaspoons fresh lemon juice 1/2 teaspoon Louisiana hot sauce
Burgers: 1-1/2 lbs lean ground pork 1/4 cup dry bread crumbs 2 Tablespoons water 1 Tablespoon Worcestershire sauce 1/2 teaspoon salt 1/2 teaspoon ground black pepper 1 large egg
1. To make the filling, in a small bowl, combine the filling ingredients and set aside.
2. To make the topping, in a medium-size bolw, combine the topping ingredients and set aside.
3. To make the burgers, in a large bowl, combine the burger ingredients with your hands until well blended. Shape the mixture into 12 equal-size patties, each about 4" in diameter. Spread 6 of the patties with 2 Tablespoons of the filling mix to within 1/2" of the edges, top with the remaining 6 burgers, and seal the edges firmly together. Or you can blend the mixture directly into the burger mixture before forming into patties.
4. Prepare a medium-hot fire in your grill.
5. Place the burgers directly over the coals, cover, and cook until no longer pink in the middle, 6-7 minutes per side.
6. When done, place the burgers on the buns and garnish with the avocado topping.
