In pressure cooker or large pan, brown: 2-3 Tablespoons oil 2 pounds lean beef stew mean (cut into 1-inch cubes) 2 Tablespoons flour Cook until meat is browned. Add enough water to more than cover the meat (I put almost half a pan of water). Pressure meat for 20 minutes (or cook in saucepan until meat is tender and falling apart.) Add: 1 can Ro-tel diced tomatoes & green chilies 1 large onion, chopped 3 garlic cloves, chopped 1 beef boullion cube 1 (4oz) can chopped green chilies 1 teasp. dried oregan 1/2 teaspoon ground cumin Salt & pepper to taste 1 (15oz) can white hominy, drained 1 pound tomatillos, diced (about 4 cups) 2 jalapenos, seeded & chopped 2 bunches cilantro, chopped Cook until all ingredients are well done. The flour on the meat makes the soup slightly thick. Serve hot with Jalapeno Cornbread, or Cheese Quesadillas. This is REALLY GOOD!!!
