INGREDIENTS
1 cup flour 1 1/2 tsp. baking powder 1/4 tsp. salt 2 eggs 2 Tbsp. canola oil 2 Tbsp. honey 3/4 cup blueberries 1 cup Silk Unsweetened, Original, Vanilla, Light Vanilla or DHA Omega-3 & Calcium 1 Tbsp. cornstarch PREPARATION
Combine flour, cornstarch, baking powder and salt in a medium mixing bowl. In a small bowl, whisk eggs, Silk, oil and honey until thoroughly combined. Pour the soymilk mixture over the dry ingredients and whisk gently until barely combined – the batter should be slightly lumpy. Stir in the blueberries. Cook on a hot oiled griddle.
Makes about 12 pancakes.
