How to Use Modified Tapioca Starch in These Recipes Modified tapioca starch, or Expandex, is an excellent addition to improve the texture of gluten-free baked goods—especially items that are egg-free. This white powdery starch, made from tapioca, lends a higher rise, better texture, and longer shelf life to baked goods, especially quick breads and yeast breads, without imparting any color or flavor.
