Whole flaxseeds are not digested, because their tough hull makes it impossible for our bodies to break them down. But they supply interesting texture and visual appeal in breads like this one. Flax meal, on the other hand, is ground flaxseeds, and the important nutrients are easily absorbed in this form. Chia is a member of the mint family; the seeds do not need to be pulverized to be absorbed, so leave them whole, but grind them with a spice grinder if you want to reduce their grittiness.
