1/2 lb smoked sausage 2 Tablespoons butter 1/2 cup diced onion three 14-1/2 oz cans chicken broth 5 small new red potatoes, quartered one 10 oz pkg frozen chopped collard greens salt, pepper, and garlic powder to taste
Cut the sausage into 1/4" slices. Melt the butter over medium heat in a large saucepan; add the onion and sausage, and saute until the onion is transparents, about 10 minutes.
Add the chicken broth, potatoes, salt, pepper, and garlic powder. Bring to a boil, reduce the heat, cover, and cook for 10 minutes.
Add the collard greens, cover, and cook for 20 minutes longer. Before serving, using a fork, mash some of the potatoes to thicken the soup.
Serves 4-6
