2 Tablespoons butter, divided 1 pkg (3 oz) oriental ramen noodles, crumbled 1/2 cup chopped pecans 1 pkg (8 oz) sliced mushrooms 2 cups hot cooked rice 2 Tablespoons chopped fresh parsley
Melt 1 Tablespoon butter in large skillet over medium-high heat. Add ramen noodles and pecans; cook and stir 3 minutes or until toasted. Remove to plate.
Melt remainint 1 Tablespoon butter in skillet. Add mushrooms; cook and stir 8 minutes or until browned.
Reduce heat to medium; add rice, seasoning packet from ramen noodles, noodle mixture and parsley; cook and stir 2 minutes or until heated through.
Makes 4 servings
Tips: If this dish will not be served right away, reserve the toasted noodles and pecans. Fold into pilaf just before serving so they stay crisp.
Add 1-1/2 cups chopped cooked chicken to this pilaf to make a main dish.
