1 Tablespoon olive oil 1 small onion, chopped 2 cloves garlic, minced 1/4 teaspoon ground red pepper 1 can (about 14 oz) fire-roasted diced tomatoes
Heat oil in medium skillet. Add onion and garlic; cook and stir about 3 minutes or until onion is tender and golden brown. Stir in red pepper.
Remove skillet from heat; add tomatoes. Process in blender or food processor until smooth. Return to skillet and cook about 10 minutes or until thickened and reduced to 1-1/2 cups.
Makes 1-1/2 cups dip
