3/4 cup all-purpose flour 3/4 cup beer or water 1 egg 3/4 teaspoon baking powder 1/2 teaspoon salt 1/4 teaspoon ground red pepper 1 cup flaked coconut 2 pkgs (3 oz each) ramen noodles, any flavor, crushed* 20 jumbo raw shrimp, peeled & deveined 2 cups vegetable oil
*discard seasoning packets.
Whisk flour, beer or water, egg, baking powder, salt and red pepper in medium bowl. Combine coconute and noodles in another medium bowl. Dip shrimp in batter; shake off excess. Coast with coconut mixture.
Heat oil in large skillet to 350 F. Cook shrimp in batches 3 minutes or just until golden, turning once halfway through cooking. Drain on paper towel-lines plate.
makes 4 servings
Tip: Use one hand to dip the shrimp in the batter and the other hand to coat with coconut mixture. This way, your hands will not mix up the mixtures and create a larger mess.
