Tomato Basil Soup
1 large mild onion, chopped (can use 1 medium onion and 2 shallots)
1/4 cup butter 1-1/2 lbs. Ripe tomatoes, or 28 oz. Can diced tomatoes 2-1/2 cups chicken broth from the carton 3 tablespoons fresh basil, chopped take basil of the stem by stripping the basil from the stem
Sauté the onion and shallots in butter until soft. Add tomatoes and continue cooking for another minute. Pour in the chicken broth. Bring to a boil then simmer for 20 minutes. Puree the mixture in a blender, then add basil. Return to the heat until warmed.
