Diabetic Oatmeal Peanut Butter Bars
3/4 cup quick oats 3 tablespoons reduced fat biscuit baking mix 1 teaspoon baking powder 1 cup SPLENDA Granular 1/2 cup + 2 tablespoons reduced fat peanut butter 1 egg, or equivalent in egg substitute 1/2 cup fat free half & half 1/2 cup no fat sour cream 1 tablespoon vanilla extract
Preheat oven to 350 degrees. Spray a 9 x 9 inch cake pan with butter-flavored cooking spray In a small bowl, combine oats, baking mix, baking powder and SPLENDA In a large bowl, combine 1/2 cup peanut butter, egg, half &: half, sour cream and vanilla extract. Add oatmeal mixture. Mix gently just to combine. Spread batter evenly into prepared pan. Bake for 18 to 22 minutes or until lightly browned. Drop remaining 2 tablespoons peanut butter by teaspoon over warm top. Using a butter knife, carefully spread peanut butter over top. Place pan on a wire rack and allow to cool completely Cut into 16 bars.
