Diabetic Applesauce Cake
6 tablespoons margarine, softened Liquid sugar substitute to equal 1-cup sugar 1 teaspoon baking soda 1 cup cold unsweetened applesauce 2 cup all-purpose flour 1 egg, beaten 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon cloves 6 tablespoons raisins 6 small walnuts, chopped
In a bowl cream the margarine and the sugar substitute. Add the baking Soda and the applesauce; mix well. Add the remaining ingredients. Stir Until blended (do not over mix). Pour the batter into a non-stick 7 x 11-inch cake pan. Bake at 350-degrees for 40 to 50 mins.
Serves 15
Exchange Values= 1-1/2 bread and 1/2 fat.
