Breaded Veal Cutlets
1 egg 1/3 cup progresso italian style of Parmesan bread crumbs 2 veal cutlets (3 oz each) 1 tablespoon vegetable oil 1 can (8 oz) tomato sauce 1/2 teaspoon Italian Seasoning 1/2 cup shredded mozzarella cheese
1. In shallow bowl, beat egg with fork. In shallow dish, place bread crumbs. Dip each veal cutlet into egg; coat with bread crumbs.
2. In 8" nonstick skillet, heat oil over medium-high heat. Add veal; cook on both sides until browned.
3. Reduce heat to low; stir in tomato sauce and Italian seasoning. Cover; simmer 12-15 mi nutes or until veal is tender. Sprinkle with cheese; cover and cook 1-2 minutes longer or until cheese is melted.
